At Akaiito on Flinders Lane, our Omakase brings together Japanese ingredients, robatayaki charcoal cooking and contemporary French technique. It is a chef-selected seasonal progression shaped by fire and the kitchen’s French-Japanese approach.
This is the starting point for understanding the Akaiito Omakase dining experience: the relationship between ingredients, cooking methods and the courses on our menu.
A French-Japanese progression, shaped by fire
Our French-Japanese Omakase centres on Japanese ingredients and precise French cooking, with robatayaki charcoal as a defining part of the kitchen’s approach. Each course reflects the kitchen’s French-Japanese approach.
The menu is seasonal. Before making plans around a particular dish, check the latest menu and speak with our team. The examples below reflect the menu displayed on our website on 20 October 2026.
Reading the experience through the menu
Akaiito Beef Tartare is listed with potato gratin and yuzu emulsion. It brings together beef tartare, the layered richness of potato gratin and a yuzu emulsion.
Further through the current menu, Patagonian Toothfish is paired with white zucchini, diamond clams and beurre blanc. Beef Pithivier appears with mushroom duxelles, silver spinach, jus and cream. These dishes help describe Akaiito in concrete terms: the menu connects Japanese ingredients and flavours with recognisable French preparations.
Robatayaki charcoal cooking remains part of the overall approach. The menu also includes seafood, meat, bread and dessert courses. Read the complete progression when planning your visit.
